Recipe: BBQ Pulled Pork

Ingredients:
- 4–5 lb boneless pork shoulder (aka pork butt)
- 1 tbsp brown sugar
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp cumin
- ½ tsp chili powder
- 1 tbsp olive oil
- ½ cup apple cider vinegar
- 1 cup water
- 1½ cups BBQ sauce (your favorite style)

Instructions:
- Preheat oven to 300°F. Use a roasting pan or Dutch oven with a lid.
- Mix the dry rub. Combine brown sugar, paprika, garlic powder, onion powder, salt, pepper, cumin, and chili powder in a small bowl.
- Coat the pork. Pat the pork shoulder dry with paper towels, then rub it all over with olive oil. Massage the dry rub into the meat on all sides.
- Add liquid to the pan. Pour vinegar and water into the base of the pan or pot. Place the pork inside, cover tightly with a lid or foil.
- Roast low and slow. Cook for 6–8 hours, or until the pork is fall-apart tender and easily shreds with a fork.
- Shred the meat. Transfer the pork to a cutting board. Let it rest 15 minutes, then shred with two forks.
- Mix with BBQ sauce. Place shredded meat in a large bowl or back in the pot. Add BBQ sauce and toss to coat evenly.
