Ingredients:
- 1 cup uncooked quinoa
- 2 cups water or vegetable broth
- 1 cup diced cucumber
- 1 cup cherry tomatoes, halved
- 1/4 cup diced red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 1 teaspoon lemon zest
- Salt and pepper to taste

Instructions:
- Rinse quinoa under cold water to remove bitterness.
- In a medium saucepan, combine quinoa and water (or broth). Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed.
- Remove from heat, fluff with a fork, and let cool to room temperature.
- In a large bowl, combine cooled quinoa, cucumber, tomatoes, onion, parsley, and mint.
- In a small bowl, whisk together olive oil, lemon juice, lemon zest, salt, and pepper.
- Pour dressing over the salad and toss until evenly coated.
- Chill for at least 30 minutes before serving for best flavor.
