    Ingredients:

    • 2 cups parboiled long-grain rice

    • 2 tablespoons tomato paste
    • 2 teaspoons curry powder
    • 1 teaspoon dried thyme
    • 2 bay leaves
    • 2–3 bouillon cubes (Chicken or meat depending on protein choice)
    • 4 cups chicken or vegetable stock
    • 1–2 cups mixed vegetables (optional: peas, carrots, green beans)
    • Salt and pepper to taste
  • Instructions:

    1. Rinse rice thoroughly and set aside.
    2. Heat oil in a large pot over medium heat. Add onions and sauté until translucent.
    3. Stir in tomato paste and cook for 2–3 minutes.
    4. Add blended tomato and pepper mixture, curry powder, thyme, bouillon cubes, salt, and pepper. Simmer for 10–15 minutes, stirring occasionally.
