Garlic Butter Green Beans with Lemon

Garlic butter green beans are an easy side dish for salmon, chicken, or a simple rice dinner. A brief boil cooks the beans evenly, then a quick toss with butter, garlic, and lemon adds flavor without hiding their fresh taste.

These original Stash Proof photos show green beans and other ingredients during meal preparation. The finished side dish uses just the green beans, with the seasonings listed below.

Garlic butter green beans with lemon

Ingredients

  • 1 pound fresh green beans, stem ends trimmed
  • 2 tablespoons unsalted butter
  • 1 teaspoon olive oil
  • 3 garlic cloves, finely minced
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon fine salt, plus salt for the boiling water
  • ¼ teaspoon ground black pepper
  • 1 tablespoon chopped parsley

Equipment: a saucepan, colander, and wide skillet. Contains milk from the butter; use a suitable dairy-free alternative if needed.

How to cook the green beans

  1. Prepare the beans. Rinse them under running water and trim the stem ends. Leave them whole or cut into similar lengths so they cook evenly.
  2. Boil until crisp-tender. Bring a saucepan of salted water to a boil. Add the beans and cook for about 4–5 minutes, checking a bean for your preferred tenderness. Very slender beans may need less time.
  3. Drain thoroughly. Shake off excess water in a colander. Wet beans can make the finishing pan watery.
  4. Toss in the skillet. Melt the butter with the olive oil over medium heat. Add the drained beans and toss for about 2 minutes.
  5. Add the garlic. Reduce the heat to medium-low. Add the minced garlic and cook, stirring, for 30–60 seconds until fragrant. Keep it moving so it does not burn.
  6. Finish and serve. Turn off the heat. Add the lemon juice, ¼ teaspoon salt, pepper, and parsley. Toss, taste, and serve immediately.

Make a ready-to-cook green bean portion

For longer meal planning, prepare plain beans for the freezer, then add the garlic butter when cooking. Freezer preparation differs from cooking the finished side dish: blanch trimmed green beans for the recommended freezing time, cool promptly, drain, and freeze before packing. For green beans cut into 2–4-inch lengths, the standard water-blanching time is 3 minutes.

Spread the cooled, drained beans on a clean freezer-safe tray and freeze until firm. Pack a side-dish portion in a Stash Proof clear precut vacuum seal bag that comfortably fits the food and your machine's required sealing space. The clear film makes the portion easy to identify; a label records what you cannot see, including the date and preparation method.

Keep the bag opening clean and dry, follow your sealer's settings, and check for a continuous seal. Return the pack promptly to a freezer at 0°F (−18°C) or below. Stash Proof's 5.5 mil film does not make a pouch puncture-proof or replace proper preparation.

Separate vegetable pouches keep ingredients organized. Follow the preparation directions for each vegetable before freezer packing.

Label each pack “Green beans · blanched · 4 side servings · packed [date].” For the best workflow, store the beans separately from fish or other raw proteins. The photograph shows different ingredients in separate pouches, rather than a complete meal ready to eat.

For cooking, add frozen blanched beans directly to boiling water and cook until hot and tender to your liking. Drain well, then continue with the butter-and-garlic skillet steps. They have already been blanched, so check them early rather than automatically using the fresh-bean timing.

Leftovers and reheating

Refrigerate cooked beans in a shallow container within two hours, or one hour above 90°F (32°C). Keep at 40°F (4°C) or below, use within 3–4 days, and reheat to 165°F (74°C).

Reheat in a skillet with a small splash of water, then uncover briefly so excess moisture can evaporate. The beans will soften with reheating. Vacuum packaging does not make cooked vegetables safe at room temperature or extend the refrigerator limit.
